    Add a vibrant, youthful hue to your baking with this bright and saturated pink. Candy makes the perfect stand-alone statement or packs a high contrast punch when paired with Yellow.

    Method

    Prepare the Cheesecake Filling

    • Combine the cream cheese and sugar and beat on medium speed until nice and smooth.
    • Blend in your sour cream and vanilla extract until fully combined.
    • Gradually mix in the thickened cream and salt until fully combined.
    • Put your cheesecake filling to the side.

    Prepare the Mould

    • Melt your Chocolate Drip as per the instructions on the bottle (microwave or boiling water methods).
    • Drizzle Chocolate Drip onto the surface of your mould, spreading with a straight spatula until the entire surface is covered.
    • Allow your moulds to set for 10-15 mins at room temp or 5 mins in the fridge.
    • While the moulds set, fill a piping bag with your cheesecake filling.
    • Once the moulds have set, pipe your cheesecake filling into each mould until 7/8 full.
    • Seal the base of the moulds with another layer of Chocolate Drip, smoothing it out so it's nice and flat with a straight spatula.
    • Pop your moulds into the fridge, it's time to make the disco ball decorations!

    Drizzle Chocolate Drip onto the surface of the mould.

    Smooth with a straight spatula until the surface is fully covered.

    Pipe the cheesecake filling into the mould until 7/8's full.

    Seal the base of the mould with more chocolate drip and smooth to ensure it's nice and flat.

    Making the Disco Balls

    • Pour Chocolate Drip onto a smooth surface (smooth chopping board, acetate or baking paper).
    • Spread out the Chocolate Drip with your straight spatula ensuring a nice and smooth, even surface.
    • Allow to set for 10-15 mins at room temp or 5 mins in the fridge.
    • Once set, use a knife to chop the chocolate up into small squares - these will be your disco ball squares.
    • Using a food-safe brush, apply Bakers Bond to each square and place onto your cheesecake sphere in a disco ball pattern.
    • Allow to set at room-temperature for approx. 10 mins to ensure the glue has fully dried.
    • With a food-safe brush, gently apply Lustre Blend to the surface of your disco ball.

    Pour Chocolate Drip onto a smooth surface.

    Allow to set and chop into small squares.

    Use Bakers Bond edible glue to attach the squares to your cheesecake square.
